How to Make an Oktoberfest-Inspired Breakfast Burrito

Oktoberfest is all about flavorful foods, and what better way to celebrate than with a tasty twist on a traditional German dish? This breakfast burrito is stuffed to the brim with eggs, cheese and corned beef, then pressed to perfection in a panini press. Whether you're looking for a new breakfast for a lazy Sunday morning or you need a new use for your Oktoberfest leftovers, this burrito is the perfect choice. Ingredients:

  • large flour tortilla
  • corned beef
  • medium potato, shredded or cubed
  • 3 large eggs, beaten
  • 2 green onions, finely sliced
  • salt and pepper
  • cooking oil
  • shredded cheese (optional)

Directions:

  1. Heat oil in a frying pan over medium heat.
  2. Scramble the eggs, then season with salt and pepper. Set aside.
  3. Heat more oil over medium heat. Cook the corned beef for 2 minutes.
  4. Add the potatoes, then cook for 2 more minutes. Season with salt and pepper, then set aside.
  5. Place your tortilla on a cutting board, then add the scrambled eggs, corned beef, and green onions. (Optional: Add shredded cheese.)
  6. Fold tortilla on the sides first, then roll the tortilla from bottom to top.
  7. Place the burrito in a panini press or sandwich maker. Cook for about 1 minute, or until nice grill marks appear.
  8. Serve with your favorite salsa (or beer!) and enjoy.
