How to Make the Best-Ever Chocolate Olive Oil Cake
For the cake base:
- 1 1/2 cups of all-purpose flour
- 3/4 cup of unsweetened sifted cocoa powder
- 1/2 tsp of sea salt
- 3/4 cup of dark brown sugar
- 3/4 cup of white granulated sugar
- 1 1/2 tsp of baking soda
- 1/2 cup of olive oil
- 1 1/2 cups of brewed coffee
- 1 tbsp. of white vinegar
Step 1: Preheat Your Oven
Before anything else, preheat your oven to 350 degrees F.
Step 2: Prep Your Baking Pan
Take a 9in round cake pan and line the bottom with some parchment paper. Add a coat of cooking spray to the bottom and sides of the pan so your cake doesn’t stick when you bake it later on.
Step 3: Mix Your Dry Ingredients First
Pour your flour, salt, cocoa powder, baking soda, and granulated sugar into a bowl and mix until well-combined.
Step 4: Add Your Wet Ingredients
Add in your dark brown sugar and olive oil, then whisk until incorporated. Lastly, pour your coffee and vinegar and mix until you get a smooth batter texture
Step 5: Pour Batter into the Pan
Pour your batter into the cake pan you prepared. Make sure it’s not overfilled to give your cake room to rise.
Step 6: Bake
Bake your cake for 30-35 minutes, or until the toothpick test comes out clean with just a few crumbs sticking on the toothpick
Step 7: Let Cool
Let your cake cool for 10 minutes before adding your glaze or frosting.
Chocolate Olive Oil Cake Ideas
Now that you have your cake base ready, it’s time to add frosting. You have several options when it comes to toppings.
1. Powdered Sugar
If you’re in a hurry, or you’re in a mood for something relatively light, a dusting of powdered sugar makes a huge difference to your chocolate cake.
2. Chocolate Glaze
A chocolate glaze adds a richer, more chocolatey dimension to your chocolate olive oil cake. To make the glaze, you’ll need:
- 3/4 cup of semi-sweet chocolate chips
- 3 tbsps. of olive oil
- 2 tbsps. of unsweetened cocoa powder
- 1 tbsp. of corn syrup
- A pinch of coarse salt
Combine all the ingredients in a microwave-safe bowl and melt it inside the microwaves in 15-30 second intervals. Stir after every cycle until completely melted.
Pour on top of the cake until you cover the entire top part. Let the glaze drip on the sides.
3. Cream Cheese Frosting
For those who can eat dairy, the light texture of the cream cheese makes a wonderful contrast to the cake’s rich flavor profile. For this, you’ll need the following:
- 1 block of softened cream cheese
- 3 cups of powdered sugar
- 2 tbsps. of cocoa powder
- 2 tbsps. of milk
Place your cream cheese in a bowl and beat with an electric mixer until you get a nice, creamy texture. Add the rest of the ingredients and beat until well-combined.
