Instant Pot Chicken Noodle Soup Recipe Anyone Can Make

A healthy recipe for an instant pot chicken noodle soup is easy to find. With the right ingredients and noodles, your chicken recipe should be a delicious one that your whole family will surely enjoy.

Here’s a Healthy Instant Pot Chicken Noodle Recipe for You!

What You Will Need:

  • 2 Tbsp unsalted butter
  • 1 large white onion
  • 2 medium pieces of carrots
  • 2 stalks of celery
  • 2 pounds or about 1 kilogram of chicken, including skin and bones
  • About 2 cups of uncooked egg noodles
  • 4 cups of organic and no sodium chicken broth
  • 1 tsp of dry thyme, or 1 Tbsp of chopped fresh thyme
  • 1 Tbsp of chopped fresh parsley
  • 1 tsp of dry oregano, or 1 Tbsp of chopped fresh oregano
  • 4 cups of water
  • Salt and pepper to taste (approximately 1 tsp each)

Step 1: Prep Your Pot and Your Ingredients

Grab your instant pot and turn it into its sauté setting. Quickly chop up all your vegetables into bite-size pieces, depending on your preference.

Some people like their carrots and onions big, while others prefer it diced. Slice them however you want to, just make sure to consider their size, bigger pieces cook longer, while smaller pieces get soggy pretty quickly.

Step 2: Sauté Your Veggies!

When your pot is ready and your vegetables are all chopped up, then it’s time to head to the cooking! Place your butter in the pot and let it melt.

Make sure you don’t burn your butter when sauteing it. When it’s all melted, place your chopped onions, carrots, and your celery into the pot.

Mix them all together with your wooden spoon and make sure to coat everything nicely with the melted butter.

Step 3: Add Your Herbs and Spices

When you’ve coated your veggies with the butter, you can now add your spices! Put your salt and pepper, thyme, parsley, and oregano, and mix it all together.

Adding fresh herbs to this recipe will result in a more aromatic and more delicious instant pot chicken noodle soup. But if you only have dried herbs, don’t worry because your instant pot chicken noodle soup will still taste amazing, trust us!

Moreso, you don’t have to have all the herbs in this dish. If you are lacking thyme or oregano, that’s totally fine. Parsley, however, is a more important addition to this dish as it complements the chicken flavors very nicely.

Step 4: Here Comes the Chicken

After mixing in all your spices and herbs with your vegetables, then it’s time to add in your chicken! But first, put in the chicken broth.

You can also use a chicken cube dissolved in four cups of water, in place of the broth. Make sure that you dissolve it in a separate bowl before adding to your instant pot.

Add your cleaned chicken after, with its skin and bones in. You’ve probably noticed in the video above that the chicken is not chopped up yet.

We actually want the chicken to be in big pieces for this step because we are going to shred it later on. It’s easier to shred if it’s in big pieces. Basically we want our chicken to be cooked first before we shred it.

After placing your chicken in, add your four cups of water.

Step 5: Cover, Cook, and Shred!

Now you’re going to cover your instant pot and let your chicken cook for about seven minutes. When the time is up, open your instant pot and check if your chicken is fully cooked.

Remove your big chicken pieces and shred into thin or chunky pieces, this is totally up to you if you want more of a bite in every sip or just want easy pieces to chew on for your instant pot chicken noodle soup.

Make sure to let your chicken cool down a little bit before you shred it. We don’t want to burn our fingers in this process so it’s advisable to use some gloves or two forks when shredding.

Step 6: Add the Egg Noodles

Cook the egg noodles for about seven to eight minutes, depending on the strength of your instant pot. Make sure to stir continuously so that the egg noodles don’t stick to each other and lump together.

Step 7: The Final Step!

And now we are at the final step of this delicious and easy instant pot chicken noodle soup recipe! When your noodles are cooked, add your shredded chicken and stir your pot.

Add in some more chopped parsley and salt and pepper to taste as needed and mix well.

Then you’re done! Turn off your instant pot and serve to your hungry lunch or dinner guests!
