How To Make The Famous Sushi Bake

Satisfy your cravings with this savory sushi bake recipe. This delicious recipe is the deconstructed version of the famous Japanese sushi roll.

Ingredients:

For Sushi Rice 

  • 4 cups cooked rice
  • 3 tablespoons of rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

For Furikake

  • 1/2 cup sesame seeds
  • 1/2 cup Korean roasted seaweed, cut into small portions
  • 1 teaspoon salt
  • 1 teaspoon sugar

For Topping

  • 1 big ripe mango, diced
  • 1 medium cucumber, diced
  • 2 cups Kani, shredded
  • 200 grams of cream cheese
  • 1/4 cup of Japanese mayonnaise
  • 1 tablespoon of Sriracha
  • 1 teaspoon of salt
  • 20 sheets of Korean or nori seaweed sheets

Directions:

For Sushi Rice 

  1. In a bowl, add the rice vinegar, salt, and sugar, then mix all together.
  2. Put the mixture in the microwave to warm until both salt and sugar are fully dissolved.
  3. Pour the hot mixture into the freshly cooked rice and toss until ingredients are equally distributed.

Tip: Use short-grained or medium-grained rice to get the original texture of the sushi rice and achieve the stickiness similar to the classic sushi roll.

For Furikake

  1. Toast the sesame seeds under very low-heat temperature.
  2. Stir occasionally and cook until golden brown.
  3. Mix the nori pieces
  4. Add salt and sugar to taste.

Tip: Add flying fish roe or fish eggs to your furikake for a more gastronomic experience.

For Creamy Toppings

  1. In a medium-sized bowl, mix the cream cheese, mayonnaise, and Sriracha.
  2. Combine the Kani and the 3/4 portions of both the mango and cucumber. Leave enough amount of mango and cucumber for the layering of the final product.
  3. Add salt to taste.

Sushi Bake

  1. Using a rectangle pan, spread the sushi rice evenly and press down lightly. Make sure that all edges are covered.
  2. Sprinkle enough amount of Furikake on top until the sushi rice is fully covered.
  3. Spread in a topping evenly. Add the mango and cucumber bits along with an extra amount of Furikake.
  4. Drizzle the mayonnaise Sriracha according to the desired amount.
  5. Bake the mixture for 15 to 20 minutes at 200°C or 390°F.
