Avocado brings out that creaminess from the cauliflower rice. This is an easy dish that can be paired with just about anything. Plus, you can add avocado with any type of rice–may it be brown, white, or cauliflower. It works well with quinoa, too.

Stay Healthy With Creamy Avocado Cauliflower Rice
Ingredients:
- 1 tablespoon of olive oil (or coconut oil)
- 1/2 cup of diced onion
- 2 cloves of minced garlic
- 4 cups of cauliflower rice
- 1 cup of ripe, mashed avocado
- 3 tablespoon of chopped parsley
- 1/2 teaspoon of salt
- 1/4 cup of keto-friendly Parmesan cheese
- 1/4 cup of water
- 1 piece of seeded and diced jalapeno pepper (optional)
Step 1: Make the Cauliflower Rice
Grate the cauliflower in a food processor until it turns into a fluffy rice texture or if you go for cheesegrater it is also a great way to grate the cauliflower.
Step 2: Saute the Ingredients.
In a pan over medium heat, add the olive oil, garlic, and onion. Cook for about 3 minutes or until the garlic and onion turn brown. Stir the ingredients occasionally.
After, it's time to add the cauliflower rice. The process is just like cooking fried rice. Continue cooking and mixing for about 10 minutes until the cauliflower is thoroughly cooked.

Step 3: Add the Avocado

Add the mashed avocado, parsley, water, and salt. Mix until all the ingredients are fully incorporated. When done, add the parmesan cheese and jalapeno peppers (if desired). Stir the avocado cauliflower rice mixture until everything is well-heated.
Jalapeno peppers would give that light spice in your rice. It's also a good addition to your low-carb diet as one of its benefits is facilitating weight loss.
