Easy Keto Bread Pudding Recipe

Ingredients

For the bread:

  • 2 medium eggs
  • 1/2 cup of melted butter
  • 1/2 cup of water
  • 1 tablespoon of vanilla
  • 2 cups of almond flour
  • 1/4 cup of sugar substitute
  • 1 teaspoon of baking powder

Pudding:

  • 2 tablespoon of melted butter
  • 2 medium eggs
  • 1/4 cup of sugar substitute
  • 1 cup of heavy cream
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 tablespoon of vanilla

Step 1. Bake the Keto Bread

Let's bake the bread first! Put all the bread ingredients together and mix thoroughly. Once done, pour into the baking pan and bake for about 45 minutes at 350 °F.

Note: For this tutorial, we doubled the bread recipe. But don't worry, the ingredients already reflect the changes so you don't need to double them.

Step 2. Time for the Keto Bread Pudding Mixture

In a bowl, pour in the heavy cream, melted butter, eggs, and your sugar substitute and mix well. Then add the vanilla, cinnamon, and nutmeg. Whisk all the ingredients until fully incorporated.

Step 3. Prepare to Bake

Get your cooled freshly baked keto bread and cut or tear them into chunks. Layer the bread in your greased baking pan or casserole dish and pour in your pudding mixture.

Make sure that the bread is fully soaked with your mixture. And once all are set, bake your pudding in a 350 °F preheated oven for about 40-45 minutes. After, let it cool then sprinkle extra cinnamon or sweetener on top.

Reminder: Don't forget to grease the pan otherwise the bread will stick at the bottom.

Step 4. Serve and Enjoy!
