We all love homemade recipes; especially for cakes. You'll love this recipe for carrot cake. It soft and moist. And tastes divine. This simple carrot cake recipe is a healthier option to try.

You Will Need:

For Cake

1 cup of vegetable oil

½ cup of granulated sugar

3 pieces of eggs

2 teaspoons of ground cinnamon

2 cups of all purpose flour

1 teaspoon of baking powder

1 teaspoon of baking soda

½ teaspoon of salt

1 teaspoon of vanilla

1 cup of nuts (coarsely chopped)

5 pieces of medium sized carrots (shredded)

For Frosting

2 to 3 teaspoons of milk

¼ cup of margarine (softened)

1 package of cream cheese (softened)

4 cups of powdered sugar

1 teaspoon of vanilla

Procedure:

Step 1.

Preheat your oven to 350 degrees Fahrenheit. Get a baking pan and grease with either a cooking spray or shortening agent. Afterwards, lightly flour the pan,

Step 2.

Get a large bowl and Then pour the oil and place the granulated sugar and eggs into it. Beat for a while and put it under your electric mixer. Mix on low speeds until the mixture is thoroughly blended. This will take about 30 seconds.

Step 3.

Add the cinnamon, baking powder, baking soda, flour, salt and vanilla. Beat this under low speed for about a minute. Stir in the nuts and carrots. Pour the mixture into pan.

Step 4.

Bake this for 40 – 45 minutes and do the tooth pick test. Insert the tooth pick into the cupcake and if it comes out clean, the cakes are already well baked.

Step 5.

Place the pan in a cool rack and allow to cool for about an hour.

Step 6.

As you wait for the cake to cool down, prepare the frosting. First off, place the butter, vanilla , milk and cream cheese in a bowl and mix it under low speed until the mixture becomes smooth. Add the sugar one cup at a time. Continue mixing on low speed. Frost your carrot cake. Cover the cake and chill in the refrigerator.
