Roasted Asparagus, Lemon, Chorizo, Almonds & Feta

Say hello to this beautiful and healthy side dish — roasted asparagus topped with lemon, chorizo, chopped almonds and feta.

Roasted Asparagus, Lemon, Chorizo, Almonds & Feta

Spring calls for zesty flavors, fresh cheese, crisp vegetables and overall vibrant and healthy dishes. While you can easily find something with a slice of the season, why not incorporate everything that’s great about Spring into one amazing side dish? Check out this roasted asparagus recipe, from KitchenBowl user gingerandchorizo, packed with lemon slices, chorizo, chopped almonds and feta cheese.

Ingredients:

Step 1: Season Asparagus

Cut off the rough ends of the asparagus. Lay the the asparagus down on a roasting tray. Top with olive oil, sea salt, pepper and slices of lemon. Place the tray of asparagus in the oven at 400F for 20 minutes.

Step 2: Add Chorizo

Take the asparagus out of the oven, add the slices of chorizo and return the tray to the oven for another 5 to 10 minutes or until the chorizo is crispy.

Step 3: Toast & Chop Almonds

While the asparagus cooks, toast your handful of almonds in a frying pan for 5 minutes on low heat. Once they’re lightly toasted, roughly chop them up.

Step 4: Serve

Remove the tray from the oven for the final time and top with crumbled feta cheese and chopped almonds. Serve the asparagus on its own or with quinoa, millet, salad, or baked potato.
