During the first episode of the 5th season of his hit show Louis, comedian Louis CK prepares a seemingly standard fried chicken recipe for a potluck. Short on time, he adds lemon juice to the egg bath, which allows him to skip the buttermilk soak/brine that tacks on an extra 8 to 10 hours of preparation time. Ingredients:

  • 1 whole chicken, broken into 10 pieces
  • 2 c. flour
  • 1/2 tsp. baking soda
  • 1 tbsp. garlic powder
  • 1/2 tbsp. cayenne
  • 2 tbsp. paprika
  • 2 c. corn flakes, crushed
  • salt & pepper
  • 5 eggs
  • juice of 1 lemon
  • 2 to 3 c. lard

Step 1: Heat Lard & Make Mixtures

Begin by heating a large block of lard.

In a large bowl, combine flour, baking soda, garlic powder, cayenne, paprika, crushed up corn flakes and salt and pepper. Whisk lemon juice and eggs in another bowl.

Step 2: Coat Chicken

Now grab your chicken and dip it in the egg mixture and then in the flour combination. Make sure it's well coated, then transfer each piece to a plate.

Step 3: Fry, Keep Warm & Serve

Once the lard reaches 350F (don't go any higher than 370F), fry the chicken in batches. When the chicken is golden brown, transfer it over to a wire rack to cool.

Wrap chicken in aluminum foil to keep it warm before serving.
