Ingredients

  • 2 tablespoons of olive oil
  • 1 white onion
  • 1 bell pepper (your choice or a mix of different bell peppers)
  • 1 pound of chicken breast
  • 1 pound of fajita sliced steak (some grocery stores sell this pre-sliced to save time)
  • 2 packets of fajita seasoning
  • 1/2 cup of water
  • Toppings: Light sour cream, shredded lettuce, diced tomatoes, reduced-fat shredded cheese
  • Flour tortillas or Spanish-flavored rice

Preparation

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Chop the onion and bell pepper, adding them to the skillet and stirring until softened.
  3. Cut the steak and chicken breast into long, thin strips.
  4. Add the sliced steak and chicken to the skillet, combining it with the softened onion and bell pepper.
  5. Allow the meat to cook through completely, then sprinkle in the fajita seasoning and 1/2 cup of water.
  6. Reduce the heat to low and let the mixture simmer, stirring occasionally, until the liquid thickens.
  7. While the fajita mixture is simmering, you can warm up some tortillas in the oven or prepare a packet of Spanish rice to accompany your meal.
  8. Top with your favorite toppings, roll up the fajitas in warm tortillas, and enjoy!
