1. 3-Ingredient Ice Cream French Toast
No eggs or milk in the fridge? No problem.
Ingredients:
- 1 pint of vanilla ice cream, melted
- 4 slices of bread, preferably brioche or challah
- butter
The ice cream takes over for the traditional milk and eggs custard and adds a great sweetness to your french toast that you almost don't need syrup. Almost, but that's just us. Perfect go-to recipe when you want a delectable breakfast or brunch but don't have a lot of ingredients on hand.
We also love serving this alongside a plate of fresh fruit for a complete and delicious meal to start the day with.
2. Root Beer Pulled Pork Sandwiches
A lack of ingredients is where a slow cooker really shines. The pork cooks low and slow for 6 hours in the root beer, getting extremely tender that you can pull it apart with a fork. After your pork is cooked, add in your barbecue sauce of choice, heat and serve on hamburger buns.
If you don't have a slow cooker, a pressure cooker works just as well and in a shorter amount of time. But if you do have the extra time on your hands, go ahead and make your own homemade BBQ sauce while the pork is cooking to really level up this dish.
3. Salsa Verde Quinoa With Chicken Thighs
One pot is all you need for this 3 ingredient recipe. Make sure not to drain off the fat in the pan from the chicken as this will add a ton of flavor to the quinoa alongside the salsa verde.
Also, we love using chicken thighs rather than chicken breasts because they're more flavorful and don't dry out that easily during the cooking process.
