Zoodles and Red Sauce | Homemade Recipes
Vegetables make a great replacement for pasta, so much so that there are dozens of spiralizer recipes that allow you to turn squash, zucchini, sweet potato and more into amazing-tasting noodles. You can then enjoy them with shrimp, chicken, and other types of meat, giving you an all around healthier meal. Using zucchinis, we’re going to show you how to make noodles (otherwise known as zoodles) and cook them with chicken and tomato sauce, thanks to YouTube user James Strange.
Ingredients:
- 1 tbsp. olive oil
- 2 cloves garlic, chopped
- 1/4 c. onion, diced
- 2 large Italian portobello mushrooms
- 1 lb. ground chicken breast
- salt & black pepper
- 1 28 oz. can of crushed tomatoes
- 1/4 tsp. red pepper flakes
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 2 or 3 medium (or 4 small) zucchinis
Step 1: Cook Onions, Garlic, Mushrooms and Chicken
Begin by heating up the olive oil in a pan and then adding the garlic, onions, and mushrooms. Wait until the onions start becoming translucent and the garlic begins to smell and then add the pound of chicken. Season it with salt and pepper and cook the chicken for a couple of minutes, breaking it down with a spatula.
Step 2: Add Tomatoes & Seasoning
Now add the can of crushed tomatoes, red pepper flakes, thyme, and oregano into the pan and stir it together. Bring it to a low simmer.
Step 3: Cut Zoodles
Use your vegetable spiralizer, which you can purchase at any appliance store, to cut up your zucchinis. Lightly season them with salt and pepper and add them to your pan.
Step 4: Stir & Serve
Stir the zoodles into the tomato sauce and cook on low heat for about 5 minutes. Just before serving, stir in 2 or 3 chopped up leaves of fresh basil into the pan. Serve and enjoy!
