An Easy Rainbow Cake Recipe Perfect For Birthday Parties

You've probably seen a rainbow cake somewhere online before but thought, “That's too tough to make” right? While the different layers of vibrant color make the cake a bit intimidating, you'll be happy to know that you can pretty easily prepare a fancy looking rainbow cake right at home. Perfect for a kid's birthday, this easy rainbow cake recipe will be the talk of the party. Check out the recipe and video tutorial below, thanks to Treat Factory.

Ingredients:

  • 3 c. unsalted butter
  • 3 1/4 c. caster sugar
  • 8 large eggs
  • 5 1/2 c. self raising flour
  • 2 tbsp. vanilla extract
  • 10 tbsp. milk
  • food coloring: purple, blue, dark green, light green, yellow, orange, red & pink

Step 1: Batter

Beat the butter and sugar together until fluffy. In another bowl, whisk the eggs and add the batter to it. Sift the flour and mix till it's well combined. Finish it off by adding the vanilla extract and milk.

Step 2: Divide & Color

Equally divide the batter into 8 separate bowls and add food coloring into each one.

Mix well.

Step 3: Bake & Trim

Bake each colored batter (in same-sized pans) for 15 minutes at 350F. Once they're removed and cooled, trim each cake so that they're all equal in size.

Step 4: Finish Cake

Stack and frost the cakes, using swiss meringue buttercream. Crumb coat the cake and leave it to chill in the refrigerator for 30 minutes.

Add a fresh layer of buttercream and finish it off with some rainbow sprinkles.

Step 5: Enjoy!
