Back in 1892, a heavenly dessert was invented by Auguste Escoffier, a French chef at London’s Savoy Hotel, to honor the Australian soprano, Nellie Melba. Since then, Peach Melba was introduced to the world and has been reinvented into several versions using not just peaches but also pears, strawberries, and apricots. A Classic Peach Melba Recipe Too Good Not To Try!
A heavenly scoop of a delectable dessert is always what we wait for after every meal. And what could be better than a cool, sweet, and fruity spoonful of classic Peach Melba? Hmm! The name alone is already so intriguing, I can’t wait to try this dessert as soon as I can. I’m pretty sure you’ll love how easy and quick it is to prepare. I’m only about to try it, but I can already tell this is going to make my list of favorites!
Ingredients:
Peach Melba:
1 ½ cups water
1 ¾ cups sugar
2 tbsp lemon juice
½ tsp vanilla extract
4 peaches
1 pint vanilla ice cream
Raspberry Sauce:
1 ½ cups fresh raspberries
2 tbsp confectioner’s sugar
½ tbsp lemon juice
Step 1: Cut the peaches in half
Wash the peaches and cut them in half. Be careful when using a sharp knife.
Step 2: Combine the ingredients in a sauce pan
Set a large saucepan over low heat. Combine water, sugar, lemon juice, and vanilla extract and mix them until sugar has dissolved.
Step 3: Cook the peaches in the syrup
Once the sugar has already dissolved, turn the heat to medium-high and bring the mixture to a boil for about 3 minutes or until it thickens. Then, reduce heat to a simmer. Place the peaches in the syrup face down and cook for about 2 to 3 minutes. Flip the peaches and cook the other side. Once done, set aside.
Step 4: Prepare the raspberry sauce
Combine fresh raspberries, lemon juice, and powdered sugar in a food processor and puree until thick and smooth.
Step 5: Peel the peaches
Get the poached peaches and peel off their skins.
Step 6: Place the peaches over ice cream
Cut the peaches and place them over vanilla ice cream.
Step 7: Pour in raspberry sauce
Drizzle the peaches and ice cream with your homemade raspberry sauce. Enjoy!
