Homemade Vegetable Soup Recipe

If you are in the mood for a dish that will warm you up, a veggie soup is definitely the best dish to try! If you want to become healthy and fit, veggies are the best way to stay in great shape. If you wish to find a warm and healthy dish, a homemade vegetable soup is the perfect thing for you. If you think that this will taste bland or boring, think again. This recipe below is filled with flavors and spices that will certainly give you a burst of flavor!

Homemade Vegetable Soup Recipe

Here is a simple homemade vegetable soup recipe that you can try:

You Will Need:

  • 2 cups of the white part of the leeks (chopped)
  • 4 tablespoonfuls of olive oil
  • Kosher salt
  • 2 tablespoons of garlic (minced)
  • 2 cups of potatoes (peeled and diced)
  • 2 cups of carrots (peeled and chopped into thin circles)
  • 2 quarts of vegetable broth
  • 2 cups of fresh green beans (cut into ¾ inch sizes)
  • 4 cups of tomatoes (seeded, peeled and chopped)
  • 2 ears of corn (kernels removed)
  • ¼ cup of fresh parsley leaves (chopped)
  • ½ teaspoon of black pepper (freshly ground)
  • 1 to 2 teaspoons of lemon juice (freshly squeezed)

 

Procedure:

Step 1.

Get a sauce pan or stock pot and place it over medium heat.

Step 2.

When the pot is already hot enough, add the garlic, leeks and pinch of salt. Heat until the vegetables start to soften. This will take about 7 to 8 minutes.

Step 3.

Once it is already soft enough, you can now add the green beans, potatoes and carrots. This will take about 4 to 5 minutes. It is best that you stir the veggies from time to time.

Step 4.

Add the vegetable stock into the pot and raise the heat to high setting. Bring it to a simmer.

Step 5.

As it simmers, add the pepper, corn kernels and tomatoes. You can now reduce the heat to a low setting and cover the pot with its lid. Continue cooking until the vegetables can be considered fork tender. This will take about 25 to 30 minutes.

Step 6.

Remove the pot from the stove and add in the parsley and pour the lemon juice.

Have a taste,add kosher salt and season accordingly.
