Edible Crystals Recipe: Make Colorful and Delicious Candy at Home

What is Kohakuto?

Kohakuto, which means “amber sugar,” is a traditional Japanese candy that has been around for hundreds of years. It has a clear, jewel-like appearance and offers a satisfying mix of a crunchy outside and a jelly-like center. This treat often resembles crystals or gemstones, which add a visual appeal. With just a few basic ingredients, anyone can make this fun and easy recipe at home.

Step-by-Step Guide to Making Edible Crystals

Get ready to create stunning, edible crystals right in your own kitchen. Let’s jump in and start creating your sugary masterpieces!

Ingredients

Here’s what you’ll need to make these stunning edible crystals:

  • Sugar: The main sweetener.
  • Water: Helps dissolve the sugar and agar.
  • Agar: A thickener made from seaweed.
  • Food Coloring (optional): To give the crystals color.

Prepare the Agar Mixture

Rinse the agar if you’re using the seaweed form. Boil it over low heat for about 20 minutes until the mixture thickens. For agar powder, dissolve it in hot water and follow the instructions on the package.

Dissolve the Sugar

Add sugar to the agar mixture and  stir continuously until the sugar completely dissolves. While you can adjust the amount based on your preference, a 1:1 ratio of sugar to water usually works best.

Add Colors and Flavors

Add food coloring to give the mixture bright, jewel-like colors. You can also mix in flavor extracts like vanilla, lemon, or mint to enhance the taste. Stir everything together to evenly spread both color and flavor.

Set the Mixture

Pour the mixture into molds or a shallow tray. To create specific shapes, use silicone molds or pour it into a tray to cut out shapes later. Allow it to cool at room temperature before transferring it to the refrigerator.

Refrigerate and Cure

Let the mixture cool in the refrigerator for at least an hour, preferably  overnight. Once set, remove it from the molds or tray. If you used a tray, cut it into crystal shapes. To create a crunchy exterior while retaining a jelly-like interior,  let the crystals sit at room temperature for a few days
