Coconut flour muffins are a hot commodity especially if you’re on the keto and paleo diet. With both diets being on-trend at the moment, different recipes for coconut flour muffins have been abundant on the internet.
But are these recipes any good? We’ve searched the internet to find the yummiest and simplest recipe for coconut flour muffins so you don’t have to!

Here Is a Simple Recipe for Coconut Flour Muffins!
Ingredients:
- 1 cup of coconut flour
- 1 cup of milk that is allowed on your diet
- 2 fresh and organic eggs
- 2 tablespoons of sugar-free peanut butter (you can go with any nut butter of your choice)
- 1 tablespoon of sweetener of your choice
- 1 tablespoon of baking powder
- 1 scoop of any protein powder (optional)
- 1½ teaspoon of vanilla extract
- 1/8 teaspoon or a pinch of salt
- ¾ cup of fresh blueberries or raspberries (optional)
Step 1: Prep Oven & Mix Some of Your Ingredients
Preheat your oven to 350°F and prep your bowl.
PRO-TIP: It’s always better to use a deep bowl even though you only have a few ingredients. Having a big bowl allows you to whisk without the worry of spilling and messing up your counter.
Now that you have your bowl and whisk ready, put your coconut flour, milk, and eggs. Mix all of those together until combined.
Step 2: Time to Add the Good Stuff
Once your first batch of ingredients has been mixed in your bowl, it is time to add the rest of your ingredients.
The protein powder is optional in this recipe, but having this adds a depth of flavor to your coconut flour muffins. They also add a little bit of sweetness and really, who doesn’t want that added protein in their muffins anyway, right?
Add your protein powder, a teaspoon of baking powder, a teaspoon of your sweetener, and your vanilla. If you don’t have to use sweetener, you are free to use honey instead.
Add your peanut butter or your choice of nut butter, then your vanilla, and a pinch of salt. Mix all these together until you have everything is well incorporated.
Step 3: Line Your Pan
Put your bowl with all your ingredients to the side because it is time to line your pan. Grab your cupcake pan and line them up with cupcake liners of your choice.
No Cupcake Liners Option:
If you don’t have cupcake liners, that’s totally fine! You can just grease your pan with oil. When greasing your pan, it is important that you get to the nooks and crannies of your baking dish so the batter won’t stick to it when baking.
- Brush on melted butter or oil onto the pan.
Or:
- Another trick is to save all your butter sleeves from previous uses and putting them in the fridge.
- When you need to grease a pan, all you have to do is to grab a butter sleeve from your fridge, open it up and lay it flat inside down.
- Use the left-over streaks of butter to grease your pan and that’s it!
You’ve greased your pan and you didn’t waste your butter sleeve. Genius!

Step 4: Fill Your Cupcake Tins!
Whether you’re using cupcake liners for your coconut flour muffins, or going bare with just greasing your pan, it is now time to fill up the tins!
Scoop out enough batter and plop them into the tins. Make sure that you don’t fill them to the brim because these muffins rise to a certain height.
Because these are coconut flour muffins, they don’t rise as much as your regular all-purpose flour muffins. So you can be a bit more generous with each scoop, but make sure to not go overboard with it.
Step 5: Fold in Your Add-Ons
Now it is time to add your optional ingredients! If you are using fresh blueberries, then you can fold them in your batter before you scoop them out to the cupcake tins.
For frozen blueberries, it is best to fold them in in the portioned batter so they don’t turn your whole batter a different color. You can add as many blueberries as you want and fold them in using your fingers or a fork.
If you’re not the berry type, go for dark chocolate! Unsweetened dark chocolate would also be great for these coconut flour muffins as they add a deep flavor to every bite.
Step 6: Bake Time!
When you’re happy with whatever add-ons you’ve just folded in, then it’s time to finally bake them! Place them in your pre-heated oven for 15 to 20 minutes or until brown on top.
Whenever you’re baking, you always have to keep a watchful eye as slight changes in your oven temperature affect your baking time.
When you’re done, pull them out of the oven and let them cool completely. Enjoy your yummy coconut flour muffins!
