In this case, we'll be upping the health factor by using sweet potatoes which are so versatile and abundant in health benefits. Read on to find out just how delicious and simple it is to make sweet potato tots at home.

Tater Tots Aren't Just For School Lunches Anymore

Ingredients

  • 2 medium-sized sweet potatoes, peeled
  • 1 cup of panko bread crumbs
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1 tablespoon of smoked paprika
  • 3 tablespoons of coconut oil
  • olive oil or cooking spray
  • salt

Step 1: Peel and Boil The Sweet Potatoes

Peel the sweet potatoes and place them in a medium pot with water. Make sure to adequately salt the water too as this will help season the potatoes from the inside out and make them more flavorful as they cook.

Boil the sweet potatoes for 15 minutes only. The goal here is to tenderize the potatoes a bit but not to fully cook them. After 15 minutes, take the sweet potatoes out and allow them to cool.

Step 2: Prepare The Bread Crumb Mixture

While the sweet potatoes are cooling, we'll be mixing together the bread crumb mixture which will add flavor, body, and a crunchy exterior to the sweet potato tots.

In a medium bowl, add in the panko, garlic powder, onion powder, smoked paprika, salt and pepper, and coconut oil. Mix until everything is thoroughly combined and set aside.

Step 3: Grate The Sweet Potatoes

When your sweet potatoes are cool enough to handle, grate them out onto a towel. Once you've grated them, try to squeeze as much water as you can from the potatoes. This will help with the cooking process later and promote a more crunchy exterior on the sweet potato tots.

Reminder: Do not skip this step otherwise you risk ending up with soggy tater tots.

Step 4: Roll Out Sweet Potato Tots

Preheat your air fryer to 400°F and grease your air fryer basket with a light spray of cooking oil. Next, take your grated sweet potatoes and form them into a tater to shape before rolling them in the bread crumb mixture and placing them on your pan.

Be sure to not let any of the tater tots touch which can cause them to stick together and not crisp up properly.

Step 5: Bake The Tots Until Crispy And Golden

Give the sweet potato tots a light spray of cooking oil before placing them in your air fryer and bake for 10 minutes. After 10 minutes, flip the tots and bake for an additional 5-10 minutes or until the tots are completely crisp. Serve with ketchup, aioli, or any preferred dipping sauce.

These tater tots freeze well after molded and can be ready to cook straight from the freezer to your air fryer. Also, these are way healthier than any tots you can buy in the frozen food aisle due to the lack of preservatives and other additives.
