Sushi consists of vinegared rice or “sushi rice” that has been wrapped in a sheet of nori and stuffed with other ingredients like seafood, meat or vegetables. In this tutorial, you’ll learn how to make traditional sushi rolls, known as Hosomaki. Why go out for sushi when you can make it at home?

What You’ll Need
- 2 rice cooker cups (360 ml) (uncooked) short grain Japanese rice*
- 2” (5 cm) kombu (Optinal, but traditionally, for sushi cooked rice with kombu are being use)
- 4 Tbsp. rice vinegar
- 2 Tbsp. sugar
- 1 tsp. salt
- 1 Japanese or Persian cucumber (yield 8 rolls)
- 6.8 oz (194 g) sashimi-grade tuna (yield 12 rolls)
- 1 box Natto (fermented soybean) (yield 2 rolls)
Last, But Not Least…
- 5 full sheets nori (roasted seaweed)
- Vinegared hand-dipping water (Tezu): ¼ cup water + 2 tsp. rice vinegar
- Soy sauce
- Wasabi (optional)
- Pickled ginger (optional)
- One bamboo sushi mat
