If you haven’t jumped on the date train, I promise you will after making these delicious raw date bars. These sweet and salty bars are a perfect ‘pick me up’ snack. Not only do these taste like a gourmet candy bar, but they also provide protein, fiber and good carbohydrates to keep you satisfied without the added sugars.

Simple, wholesome and good for you.

What You’ll Need:

  • 1 Cup pitted dates
  • ¾ Cup oats
  • 1/3 Cup shredded coconut, unsweetened
  • 2 Tbsp crunchy peanut butter
  • ¼ Tsp almond extract
  • 1 Tsp. vanilla extract
  • ½ Tsp. salt
  • 1- 2 Tbsp. water
  • ½ Cup chocolate chips

Step 1

In a food processor, blend the dates until they form a ball. Then add all the ingredients to the food processor (add the water as needed). Blend until everything is just mixed, about 15 seconds. Don’t over process or you will lose the crunchiness of the peanuts and chocolate chips.

Step 2

Take the dough out of the food processor, form a ball and then roll it onto a sheet of wax paper or a silicone mat. Place in the refrigerator for 30 minutes. Remove from the refrigerator and cut into rectangles.
