Boba tea is a delicious and refreshing treat to have, especially during these summer months, also comes in ice cream form. We'll show you how to make brown sugar boba ice cream bars to help you beat the heat and save you a trip to your local milk tea shop.

Ingredients:

  • brown sugar boba jelly
  • 1 tablespoon of vanilla whey protein
  • 2 tablespoons of milk powder
  • 1/2 cup of water
  • 1 tablespoon of sugar
  • 1/2 cup of Taiwanese brown sugar
  • 1 1/4 cup of heavy cream

Step 1: Create the Brown Sugar Syrup

In a medium saucepan, heat the brown sugar and half of the water until it comes to a boil. Scrape down the sides of the saucepan and stir occasionally to help dissolve all of the sugar.

Reminder: Sugar can burn easily, make sure to keep an eye on your saucepan during this step.

Step 2: Thickening the Brown Sugar Syrup

Lower your heat and add in the rest of the water. While stirring, continue to cook down the syrup until it has thickened to a syrup-like consistency and take off the heat.

Set aside and allow to fully cool before storing it in a squeeze bottle. If the syrup has over thickened, you can try thinning it out with a little bit of water.

Step 3: Cooking Your Ice Cream Base

In a medium saucepan over low heat, add the cream, milk powder, and whey protein. Cook this mixture, while constantly stirring to dissolve the powders into the cream as much as possible.

Don't worry if there are some bits that won't dissolve, this happens and you'll be straining the mixture later. Cook the mixture to a boil. Once boiling, cook for around 30 seconds before taking it off the heat.

Step 4: Straining the Ice Cream Base

Run your mixture through a strainer to rid of any lingering lumps in the mixture. Do this while the mixture is still warm for better results. If you wait and allow the mixture to cool, this will be more difficult as the mixture will start to thicken up.

Step 5: Molding the Brown Sugar Boba Ice Cream Bars

Now here comes the fun part, time to mold your brown sugar boba ice cream bars. Start by drizzling in the brown sugar syrup and then fill up the popsicle molds about 3/4 of the way with the cream mixture filling.

Tip: Almost any type of popsicle mold will work, but as pictured above, silicone molds tend to yield the best results if you have them on hand.

Step 6: Time for the Boba!

Next, scoop in some of your boba jellies for each popsicle. Make sure to not overfill any of the popsicles with the boba jelly pearls as they will expand a bit during the freezing process. Lastly, drizzle in another layer of your brown sugar syrup before sealing your popsicle molds.

Step 7: Freeze and Enjoy!

Set your popsicles molds and place them in the freezer for a minimum of 4-6 hours. We recommend doing this overnight to allow them to fully set. A great task to achieve during the start of the week so you have brown sugar boba popsicles ready for the coming days!
