Ingredients for creamy avocado and white bean wrap:
- 2 tbsp cider vinegar
- 2 tsp chopped chipotle chile in adobo sauce
- 1 tbsp canola oil
- ¼ tsp salt
- 1 ripe avocado
- 2 cups shredded red cabbage
- 15 oz can white beans, rinsed
- 1 medium carrot, shredded
- 2 tbsp minced red onion
- ¼ cup chopped cilantro
- ½ cup sharp Cheddar cheese
- 4 8-10 inch whole-wheat wraps
Step 1: Prepare The Filling
In a medium bowl, whisk canola oil, vinegar, chipotle chile, and salt until combined well. Add the cabbage, carrots, and cilantro. Toss the mixture until the veggies are evenly coated with the sauce.
Step 2: Mash The Beans And Avocado
In a separate bowl, mash the beans and avocado using a fork or potato masher. Add shredded cheese and minced onion.
Step 3: Assemble The Wraps
Spread the avocado and bean mixture on a wrap (or tortilla) and add the cabbage and carrot slaw on top. Roll the wrap slowly. Repeat this step until done with the remaining mixture.
