Summer calls for refreshing flavors. Shrimp, avocado, lime, tomato, and mango all have those thirst-quenching qualities, so why not combine them all into one delicious treat. As long as you've got some warm tortillas, you can stuff them with shrimp and a salsa made from a medley of vegetables and fruits. Ingredients:

For Tacos:

• ¾ lb. shrimp, peeled, deveined, and tails removed
• 1 tsp. ground cumin
• 1 tsp. chili powder
• ¼ tsp. garlic powder
• 2 tbsp. olive oil
• 1 c. purple cabbage, shredded
• 8 corn tortillas

For Salsa:

• 2 roma tomatoes, diced
• 2 tbsp. lime juice
• ½ c. cilantro, chopped
• ½ c. red onion, finely chopped
• 1 avocado, diced
• 1 mango, diced
• sea salt to taste

Step 1: Coat Shrimp

Toss the shrimp in cumin, garlic and chili powder in a large bowl.

Step 2: Cook Shrimp

Cook the shrimp for 2 minutes on each side in a pan with olive oil over medium heat.

Step 3: Avocado Salsa

Stir all of the salsa ingredients together.

Step 4: Finish Tacos

Heat up your tortillas and add shrimp to them. Top with the avocado salsa and serve.
