Homemade Outback Alice Springs Chicken Recipe
I love a lot of chicken recipes, but every now and then, I find myself craving specifically for Outback’s Alice Springs Chicken. I’m not going to lie to you, it can cost quite a bit. Not to mention the effort of having to get dressed up to step out of the house to dine. So, I’ve decided to just make this amazing recipe myself! Not only is this homemade version of Outback Alice Springs Chicken recipe easy to make, it also tastes exactly as good and as filling as the original! I’m sure you’ll perfect it in no time.
Ingredients:
- 3 chicken breasts (boneless and skinless)
- Italian salad dressing
- 8 oz baby portobello mushrooms
- 2 tbsp butter
- salt
- black pepper
- granulated garlic
- applewood smoked bacon (6 slices)
- cheddar cheese
- Monterey jack cheese
- homemade mustard sauce
Step 1: Marinate
In a Ziplock, marinate three boneless, skinless chicken breasts in zesty Italian salad dressing. Put this in the fridge for 3 hours.
Step 2: Sauté the Mushrooms
Sauté the baby Portobello mushrooms in butter. Add salt, black pepper, and granulated garlic. Let it cook for about 5-7 minutes. Set aside and let it cool.
Step 3: Grill the Bacon
Preheat your grill to 300 degrees F and set for indirect cooking. Grill 6 slices of thick-cut Applewood smoked bacon. Close the lid and let it sit for 10 mins. Flip to grill the other side for the same amount of time or until the bacon is crisp.
Step 4: Grill the Chicken
Increase the temperature of the grill to 350 degrees F. Grill the marinated chicken for 15 minutes per side. Using a brush, drizzle the chicken with homemade mustard sauce, and grill for another 5 minutes. After this, add another layer of mustard sauce, a layer of shredded Monterey jack and cheddar cheese, the sauteed mushrooms, and two pieces of the grilled bacon for each chicken breast. Close the lid for 2 minutes or until the cheese melts. Lastly, add one more layer of cheese, and cook everything for another 2 minutes.
