Before we get down to the nitty-gritty of this massaged kale salad recipe, let's clear up some things first. Why do we need to massage kale? Well, kale is a hardy, bitter vegetable which can turn silky and sweet once it's rubbed repeatedly.

As my mom always says “I don’t have time to massage kale. I think I deserve a massage before the kale does.” Although what she said makes sense, massaging kale is the key to making the tough leaves smooth and delicious.

Since we got this part clear already, let's proceed to the steps in making a massaged kale salad.

Ingredients

Salad:

  • 4 leaves of lacinato kale
  • 1 cup spinach, chopped
  • 1/3 cup garbanzo beans, drained and rinsed
  • 2 small/medium cooked beets
  • ¼ chopped green olives
  • 6 marinated artichokes hearts, quarters
  • ¼ feta cheese
  • ½ avocado
  • 6 pieces sun dried tomatoes

Dressing:

  • 3 tbsp. olive oil
  • 1 tbsp. lemon
  • 1 tbsp. red wine vinegar
  • 1 tsp. chopped basil (dried or fresh)
  • 1 clove garlic, minced

The proportion of ingredients serves about two to three people.

Step 1: Massage Your Kale

First, you need to mix the dressing together, give it a good stir, then set aside. After this, start massaging the kale. Remove the thick middle stem from the kale first then chop it. In a bowl, pour one tablespoon of dressing over the kale and massage the kale until the leaves are coated with dressing and begin to relax and soften. This takes about one to three minutes.

Step 2: Chop Everything Up

In this step, proceed to prepaaring all of the other ingredients. Chop the spinach, add the kale, and mix well. Sliver the olives into little circles, slice the beets into bite sized pieces, crumble the feta, and cut the avocado into squares.

Step 3: Mix and Serve

Now, this is the fun part because you get to mix everything up! Start with your kale and spinach base, then top them with beets, garbanzo beans, olives, artichoke hearts, avocado, feta cheese, and sun-dried tomatoes. Add more dressing as desired and mix it up.

Once it is ready, divide the salad into two bowls and serve!
