Bring Out The Master Chef In You With These Tips!

Want to tease the neighbors with the smells of some incredible grilled meats and veggies? This chapter is dedicated to everyone who has ever messed up the food they were making on the 4th of July, the people who have burned burgers time and time again, and the individuals who simply have no clue what they are doing in regards to cooking on the grill. With these easy and effective tips and grilling techniques, you'll be able to cook flavorful and melt-in-your-mouth grilled dishes to impress your family and friends.

1. Charcoal & Gas

|

First thing to consider is to choose the type of grill you are comfortable with. But that's going to be hard if you're not aware there are different types grills you can buy in the market. Don't fret! In this section, we will go over the different types of grills to give you some information prior to starting your game of grilling.

Charcoal Grilling

Charcoal grilling is usually preferred simply because of the flavor infused into the foods while using this grill. Your meat and vegetables will have the charcoal goodness throughout them, adding some intense flavors you cannot get from other grills. This is achieved through the burning of briquettes or wood. The unique flavor of charcoal grilling makes it an extremely desirable technique for grill masters everywhere.

However, make sure to use an even heat source. Don't let your charcoal grill get too hot. You want to limit the amount of charcoal in the grill to ensure you will not be cooking over a grill that is too hot. The rule is to use 30 pieces of charcoal for a pound of meat. Every extra pound of meat requires an additional 15 pieces. Too much heat will char the food too early, leaving the food uncooked and burnt on the outside. Ensure the coals to be spread out around 6 inches below the food grate.

How would you know that coals are hot enough? Try putting your hand over the grill. If you could hold your hand over for 2 seconds, then the coals are hot, 3 seconds if the coals are medium-hot, and 4 seconds if medium.

Grilling With GasGas grills

can be relatively expensive, but they really bring a patio together. Over the years, these grills have gained some popularity and have even gone down in price. These are the benefits of using a gas grill over a charcoal grill:

Boom! Heated. That fast.

Need to adjust the heat? No problem. Need consistent heat? Again, no problem.

Cleaning is a breeze!

Sometimes gas grills have lava rocks to act like charcoal, but the flavor doesn't come through as much as charcoal.

Gas grills run off of propane, meaning when it runs out; it's time for a refill. If this happens halfway through a cooking session, then you might run into some trouble if you do not have a backup.

2. Marinade Madness

While marinades don't actually tenderize meats, they do add a bunch of flavor to the surface of it. Marinades typically use acidic ingredients (lemon, vinegar, some acidic wine), herbs, oil, and maybe even some sort of chicken or beef stock. If using a marinade, make sure it is as well-balanced as it is flavorful.

Always ask yourself if you want the flavor to be sweet, medium, or hot. The main ingredient used in the dish will be the deciding factor which ultimately determines what the dominant flavor will be. For example, sweet may not be the best choice for beef, but you may want to use it for chicken.

When marinating your meat, put the meat accompanied by your marinade in a Ziploc bag or pan. Make sure to cover the meat completely. Leave the meat for at least an hour or two, but you are welcome to let it marinate overnight if you'd like. If marinating overnight, put it in the refrigerator to avoid any unwanted growth. After your meat has been marinated, pat it dry and toss it on the grill.

3. Grilling Like A Pro

|

If you're going to grill like a pro, you to have to follow these tips to ensure your technique matches your skills:

  • Clean your grill. Make sure the grill grate is kept clean. We recommend using a wire brush to clean it every time you use it.
  • Prior to lighting the grill, brush vegetable oil over the grates. This will ensure the food will not stick to it, making cleanup easier.
  • Organize your stuff! Have your ingredients, serving platters, utensils, etc. ready to go.
  • Trim the extra fat off of your meat to lessen the likelihood of a grease flare-up which will result in burning your meat.

While grilling, keep this in mind:

Watch your food! The cooking times are not exact; only you will know when they are ready. This will vary depending on how hot the coals are, how thick the cuts are, and the amount of wind.

Utilize the lid of the grill. Closing the lid can get the temperature over 450 degrees and creates an oven. This is great for foods that take a long time to cook. You can speed up the cooking process by closing the lid. You can also assist in infusing the flavors of the charcoal or wood chips into your food by doing this as well!
