A potato soup may seem like a simple recipe to perfect but you will be amazed with the various ways you can get it wrong. Most people make the mistake of making their potato soups a bit too creamy while some make it too lumpy. On the other hand, it can be too bland or too salty. The perfect potato soup recipe is one that has lots of flavor, is full of creaminess and the perfect bite of herbs. Here is a recipe that can help you achieve the perfect homemade potato soup recipe.

Homemade Potato Soup Recipe

You Will Need:

1 piece of medium sized onion, diced

6 slices of thin bacon, sliced into 1-inch pieces

3 celery stalks, diced

3 carrots, diced

8 cups of vegetable broth

6 pieces of potatoes, peeled and diced

1 cup of milk

3 tablespoons of all-purpose flour

½ teaspoon of salt

½ cup of heavy cream

½ teaspoon of spice mix

1 cup of grated cheese of your choice

1 teaspoon of fresh parsley, minced

add black pepper to taste

Procedure:

Step 1.

Pour oil into a soup pot and place it over medium heat. Fry the bacon slices until it turns crispy. Remove bacon from pot and place it into a plate then set it aside. Avoid cleaning the pot.

Step 2.

Place the same pot over medium high heat and place the carrots, celery and onion into it. Stir the vegetable and cook for two minutes. Afterwards, add in the diced potatoes and cook for about five minutes. Afterwards, sprinkle the spices, salt and pepper.

Step 3.

Pour the vegetable broth into the pan and bring it to a boil.Allow to boil for about 10 minutes or wait until the potatoes have become tender.

Step 4.

Pour milk and flour into a bowl and whisk it until it is well combined. Pour the resulting mixture into the pot and cook the soup for 5 minutes more.

Step 5.

Get 2/3 part of the soup and place it in a food mixer or blender. Blend it until the mixture is completely smooth. After that, pour the mixture back into the soup and stir it well.

Step 6.

Heat it again and try to have a taste of the mixture to determine if the amount of spice is satisfactory. Adjust if needed.

Step 7.

Stir in the heavy cream and most of the parsley.

Step 8.

Garnish with grated cheese, crispy bacon slices and the remaining parsley. Serve hot.
