Homemade Pretzel Recipe

You Will Need:

  • 1 tablespoon of sugar
  • 1 ½ cups of warm water
  • 2 teaspoonfuls of kosher salt
  • 2 ounces of unsalted butter
  • 1 package of active dry yeast
  • 22 ounces of all-purpose flour
  • 10 cups of water
  • 1 large sized egg yolk beaten with a tablespoon of water
  • 2/3 cup of baking soda
  • pretzel salt
  • vegetable oil

Procedure:

Step 1.

Get the bowl of your stand mixer and place the sugar, 1 and 1/2 cups water, kosher salt and sprinkle yeast on the top. Set the mixture aside for five minutes and wait for it to produce foam. Pour flour and melted butter into the bowl. Mix the bowl on low speed. Once the mixture is already well combined, place the speed on medium setting. Knead until the dough is just smooth.

Step 2.

Remove the dough from the big bowl and clean it then grease it with vegetable oil and return the dough back into it. Cover the bowl with plastic wrap and place it in a warm space for about 50 to 55 minutes.

Step 3.

Preheat your oven to 450 degrees Fahrenheit. Get a baking pan and line it with parchment paper and grease it with vegetable oil.

Step 4.

Get a sauce pan and pour the remaining 10 cups of water into it. Add the baking soda and allow the mixture to boil.

Step 5.

Get the dough and divide it into 8 pieces. Get each piece of the dough and roll it into a rope. Create a U shape out of the rope then cross both ends over each other. Place the pretzel shaped dough into the pan.

Step 6.

Place the pretzel sized dough in the boiling water for 30 seconds. Do this one by one. Remove it then place it back in the pan. Brush pretzels with the egg yolk and water mixture. Sprinkle salt on top.

Step 7.

Bake until the pretzel turns golden brown. This will take about 12 to 14 minutes.

Step 8.

Allow to cool for about 5 minutes before serving.
