Leftovers come in the clutch when there’s nothing else to make.

Unfortunately, eating the same thing on back-to-back days can be unappealing because we’re human. We don’t like eating the same thing every day.

Instead of digging into the same old leftovers, why not spice them up a bit? You might be surprised at how delicious you can make any leftovers, thanks to ingredients you have already lying around in your kitchen. Check out these 10 easy recipes that you can make from leftovers.

 

1. Spaghetti Carbonara

Use leftover spaghetti to make carbonara in less than fifteen minutes! All you need to do is throw in some eggs and bacon and drizzle some Parmesan cheese over the finished result to make a quick and delicious meal.

2. Shredded BBQ Sandwiches

Rotisserie chicken can be one of the most valuable leftovers because of how versatile it is. One of my favorite things to do is shred leftover rotisserie chicken into pieces, slather it with BBQ sauce, throw it into a frying pan and put it between two warm buns (or slices of toast). If you’ve got some coleslaw and cheddar cheese, toss that in there too for the ultimate shredded BBQ sandwich.

3. Chili Baked Potato

Everyone has at least one or two potatoes laying around because of how many dishes you can make from them. As long as you’ve got some leftover chili, you can easily create a loaded baked potato topped with sour cream cheese and cheese.

4. Easy Chicken Enchilada Casserole

Layer tortillas, leftover chicken, enchilada sauce and shredded Monterey Jack cheese and you’ve got yourself an easy chicken enchilada casserole that takes less than 30 minutes to bake.

5. Mac ‘N Cheese Grilled Cheese

Leftovers in a sandwich are a thing of beauty because they’re extremely simple to prepare, take no time and generally taste good. Put that leftover mac ‘n cheese to good use by preparing it inside of a grilled cheese sandwich. Heck yes.

6. Easy Eggs, Rice, Spinach, & Cheese

One of the most common leftovers is rice, so it’s only right we include a leftover rice recipe. Just toss in some eggs, spinach and cheese and you’ve got a unique omelet on your hands.

7. Stuffed Bell Peppers

Have seasoned ground beef leftover? Cut a handful of green, red and yellow bell peppers, stuff them with leftover ground beef, rice and shredded cheese and place them in a crock pot for a delicious and easy stuffed bell pepper recipe.

8. Smoked Salmon Quesadillas

All those tortillas in your fridge? Pull them out, place them on the griddle and throw some leftover salmon, cheddar cheese, pepper-jack and top with even more tortillas to make yourself some salmon quesadillas in just a few minutes.

9. Carne Asada Tacos

BBQ’s almost always lead to an overabundance of chicken and meat. So the next day when you’re hungry, grab that leftover carne asada, cut it up and throw it between warm tortillas to make tacos. Add avocado, tomatoes, lettuce, sour cream, cheese, hot sauce and any other ingredient your heart desires to make it perfect.

After Thanksgiving, there are always leftovers. Always. All that turkey shouldn’t go to waste, throw leftover turkey into a skillet along with leftover potatoes, brussels sprouts and eggs for a great day-after-Thanksgiving breakfast.
