Creamy Asparagus and Pea Risotto 🌿🧄

If you love creamy comfort food but prefer them fresh, asparagus and pea risotto is the answer. The Arborio rice turns silky smooth as it soaks up the broth. Meanwhile, the asparagus and peas keep the dish light while the Parmesan adds that rich, cheesy finish. This asparagus and pea risotto is easy enough to prepare during a weeknight and feels fancy enough for a special occasion.

Ingredients:

✅ 1 cup Arborio rice
✅ 4 cups chicken or vegetable broth, warmed
✅ 1 cup fresh asparagus, chopped
✅ ½ cup fresh peas
✅ ½ small onion, diced
✅ 2 tbsp butter
✅ ¼ cup Parmesan cheese, grated
✅ ½ cup dry white wine (optional)
✅ Salt & pepper to taste

Instructions:

1️⃣ Melt butter in a pan over medium heat and coat the surface before adding the diced onion. Sauté until softened and fragrant.
2️⃣ Stir in and lightly toast the Arborio rice for about a minute.
3️⃣ Pour in the wine (optional), then stir continuously until the rice absorbs the liquid completely.
4️⃣ Add the broth, one ladle at a time, and stir frequently to help the rice absorb the liquid. Continue this process until the rice turns creamy and tender, which should take about 20 minutes.
5️⃣ Once the rice has reached the perfect consistency, stir in the asparagus and peas. Let them cook for 3-4 minutes, just until they become tender and vibrant.
6️⃣ Remove from heat, then mix in the Parmesan cheese until melted and creamy. Serve the risotto warm and enjoy!
