How To Make A Perfect Homemade Turkey At-a-Glance:

  • Use a salt-brine soak (2 cups kosher salt + cold water) in the fridge for ~12 hours to enhance juiciness and flavour.
  • Rinse the turkey, then rub melted butter all over the bird and fill it with onion, carrot, celery, thyme & bay leaf for aromatics.
  • Roast at 350 °F for about 3½–4 hours (for an average-sized bird), turning the breast up when 2/3 through the time and brushing with butter again.
  • Always let the turkey rest for ~30 minutes before carving to preserve juices and avoid drying out.

Before You Start: Thawing & Food Safety

Fridge thaw (recommended): ~24 hours per 4–5 lb (1.8–2.3 kg). Example: 16 lb ≈ 4 days in the fridge (below 40°F/4°C).

Cold-water thaw (faster): Submerge sealed turkey breast-side down in cold water, changing water every 30 minutes. Estimate ~30 minutes per pound. Cook
immediately after.

Food safety: Do not rinse raw turkey. Pat dry thoroughly to reduce surface moisture and promote browning. Wash hands, tools, and surfaces after contact with raw poultry.

Dry Brine (crisp skin, simplest):

Ingredients:

  • 1 whole turkey (12–16 lb recommended for even roasting)
  • Kosher salt & black pepper (adjust if you dry-brined)
  • 4 tbsp softened unsalted butter (or olive oil)
  • 1 onion, quartered; 1 lemon, halved; a few garlic cloves (optional, for cavity)
  • Fresh herbs: thyme, rosemary, sage (optional)
  • 2 cups low-sodium stock (for the roasting pan)

If wet brining: use the wet brine above; reduce added salt later.
If dry brining, you’ve pre-salted; season lightly before roasting.

Procedure:

Step 1.

Rub your homemade turkey thoroughly with the kosher salt. Place the bird in a large pot and cover it with cold water. Put the pot in the fridge and leave it for 12 hours.

Step 2.

Pre-heat the oven to 350 degrees. Bring out the turkey and pat it dry; do not wash the turkey(reduces cross-contamination risk). Disregard the mixture.

Step 3.

Third, brush the butter over the homemade turkey. Place the breast part of the turkey on the rack of a shallow roasting pan.

Step 4.

Fourth, stuff the turkey with 1 onion, ½ carrots, ½ celery, 1 sprig of thyme, and 1 bay leaf. Sprinkle the remaining thyme and vegetables at the bottom of the pan. Then, cover it with white wine.

Step 5.

Roast the Turkey inside the pre-heated oven for 3 ½ to 4 hours. Check if the internal part of the thigh reaches 180 degrees. Don’t forget to turn the breast of the turkey side up once you are 2/3 through the whole roasting time. Brush the turkey with more butter. Let the bird stand for 30 minutes before you start carving.
