Ingredients

Here’s what you’ll need:

  • Four cups of all-purpose flour
  • Half a cup of granulated sugar
  • One tablespoon of kosher salt
  • One and a half cups of unsalted butter, chilled and divided
  • One tablespoon of active dry yeast
  • One and a quarter cups of warmed whole milk
  • One large beaten egg for the egg wash

Preparing the Dough

Having great dough is essential when making croissants, as it directly influences the flakiness, texture, and success of the pastry’s delicate layers. This step lays the groundwork for your croissants. This involves mixing and kneading the ingredients into a smooth, elastic dough that later holds the butter for lamination.

1. Activate the Yeast

Combine the warm milk and yeast in a small bowl. Let it sit for about 5 minutes until it becomes frothy.

2. Mix the Dry Ingredients

Whisk the flour, sugar, and salt in a large bowl for 1 to 2 minutes. Stop whisking once the ingredients are evenly combined and the mixture looks light and airy.

3. Combine Wet and Dry Ingredients

Create a well in the center of the dry ingredients and pour in the yeast mixture. Afterward, mix until a dough forms.

4. Knead the Dough

Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic. Then, shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least an hour.

Laminating the Dough

Laminating the dough when making croissants refers to the process of folding butter into the dough through a series of rolls and folds, creating multiple thin layers. This technique is what gives croissants their signature flakiness and light, airy texture.

1. Prepare the Butter Block

Cut 1 cup of the chilled butter into thin slices and arrange them on a sheet of parchment paper to make a 7-inch square. Then, place another sheet of parchment paper on top and gently pound the butter using a rolling pin to make it pliable. Refrigerate the butter block.

2. Roll Out the Dough

Flatten the dough into a 10-inch square on a lightly floured surface. Then, place the chilled butter block in the center of the dough square.

3. Fold the Dough

Fold the dough corners over the butter and make them meet in the center to fully encase it. Stretch the dough into a 16-inch rectangle, then fold it into thirds to complete the first turn. Finally, wrap in plastic and refrigerate for an hour.

4. Repeat the Turns

Repeat the rolling and folding process twice and refrigerate the dough for at least an hour between turns. This action creates the croissant’s multiple thin layers.

Shaping the Croissants

Shaping the dough when making croissants involves rolling out the laminated dough and cutting it into triangles, which are then rolled tightly into their classic crescent shape. This step ensures the croissants bake evenly and achieve their iconic appearance.

1. Roll Out the Dough

Form the dough into a 20×10-inch rectangle after the final turn and chill. Use a sharp knife or pizza cutter to divide the dough into triangles about 5 inches wide at the base.

2. Shape the Croissants

Shape the dough tightly towards the tip from the base of each triangle to create a crescent shape. Then, place the shaped croissants on a baking sheet lined with parchment paper.

3. Proof the Croissants

Cover them loosely with plastic wrap and let them proof at room temperature for 1 to 2 hours until they’ve doubled in size.

Baking

Baking croissant dough involves placing the shaped and proofed dough in the oven, where the heat helps the layers rise and turn golden brown, creating a flaky, buttery pastry. The process completes the transformation from dough to delicious croissants.

  1. Preheat the Oven
  2. Preheat your oven to 375°F (190°C) for about 15 minutes to ensure it’s fully heated before baking.
  3. Egg Wash
  4. Brush the tops of the proofed croissants with the beaten egg to give the final product a beautiful golden color.
  5. Bake
  6. Bake the croissants for 20 to 25 minutes or until deep golden brown and flaky. Next, rotate the baking sheet halfway through the process to ensure even cooking.
  7. Cool
  8. Allow the croissants to cool on a wire rack for 10 minutes before serving. This cooling period helps set their structure and enhances the flaky texture.
