Homemade Potato Soup

Ingredients:

  • Canola oil
  • ½ cup chopped onions
  • ½ cup chopped celery
  • ½ cup chopped carrots
  • 4 medium potatoes, cubed
  • 2 cups of chicken broth
  • 1 teaspoon of salt *or to taste*
  • ½ teaspoon of pepper *or to taste*
  • 1 teaspoon butter
  • Sour cream
  • Cheddar cheese, shredded
  • Crumbled bacon and chives

Optional:

  • ¼ cup of whipping cream

Procedure:

Step 1.

First, put a small amount of canola oil in a pan and sauté the onions, celery and carrots.

Step 2.

Next, add the cubed potatoes, salt and chicken broth. Bring to a boil and wait for about 18 to 25 minutes or until the potatoes are tender.

Step 3.

Then, add the butter and the whipping cream. Simmer for about 2 minutes and mash the potatoes to thicken the soup.

Garnish the soup with sour cream, shredded cheddar cheese and finally, crumbled bacon and chives.
